The spiral sweet potato design makes them look fancy, but trust me it’s super easy to make.

Ingredients to make Baked Sweet Potato Slices
- Sweet potatoes are the star of the dish! I’ve used the traditional orange sweet potatoes in this recipe
- Extra virgin olive oil is my preferred oil to use for this dish as I love the flavour it brings to the sweet potatoes once roasted. You can also use avocado, coconut oil or your preferred oil
- Garlic cloves are grated or minced and taste great once roasted with the sweet potatoes. If you’re not a huge garlic fan, you can also reduce the quantity used
- Fresh thyme leaves are always my preference but you can also use dried thyme if you don’t have access to fresh herbs
- Parmigiano Reggiano / Parmesan cheese is grated and added in between the layers. It’s then topped on top right before serving. You can easily make this dish vegan by substituting with a vegan cheese or also omitting the cheese altogether
How to make Baked Sweet Potato Slices
- Preheat oven. Set to 180°C/350°F
- Slice Sweet Potatoes. Wash and slice the sweet potatoes into thin circles, approximately the same thickness. I find it easier to use a mandolin but you can also use a sharp knife
- Season potatoes. Place potatoes in a large bowl, add olive oil, thyme leaves, grate in the garlic and finely grate the parmesan cheese. Season with spices if using any
Toss together using your hands to make sure all potato slices are nicely coated with the seasoning mixture
- Layer the slices. Spray an oven dish with oil spray and use a handful of sweet potato slices at a time. Overlap the slices so they are leaning on each other, and create a spiral pattern starting from the outside perimeter of the oven dish then moving towards the inside
- Time to bake. Cover with aluminum foil and roast for 30 minutes. Then remove from the oven and increase the temperature to 210°C/410°F
Remove the tin foil, lightly spray the top of the potatoes with oil spray and place back in the oven for 20 minutes
- Serve. Grate over some fresh parmesan cheese and enjoy your cheesy, garlicky, roasted sweet potato bake!

Tips for Baked Sweet Potatoes Slices
- It’s best to choose sweet potatoes similar in size and shape. This makes the spiral design look better and easier to create
- Try and cut the sweet potato slices into circles that are similar in thickness and size. This ensures they cook evenly and it will be easier to spiral
- I find using a mandolin is much easier to cut the sweet potatoes in the same thickness and consistency but you can also use a sharp knife
- When layering the sweet potato slices in the oven tray, try to fill the whole tray in a single layer without any gaps. Once the sweet potatoes are cooked, they will shrink a little and you’ll notice a lot of gaps otherwise

- 30 g Parmigiano Reggiano / Parmesan cheese
- Salt and pepper to taste
